INGREDIENTS:

Littleburg Almond Tzatziki

¼ cup lemon juice, divided

½ teaspoon minced fresh garlic

1 English cucumber, rinsed and trimmed

2½ teaspoons Kosher salt, divided

1 cup blanched almonds (whole, slivered or sliced)

1 cup canola oil

1¼ cup water, divided

1 tablespoon minced fresh dill

Dry Seasoning and Pork

1½ teaspoons oregano

1 teaspoon garlic powder

1 teaspoon coriander

1 teaspoon paprika

½ teaspoon Kosher salt

½ teaspoon ground black pepper

2 cups thawed Tender™ Pork

Gyros

1 tablespoon vegetable oil

4 each pita

Sliced cherry tomatoes

Thinly sliced red onion

Thinly sliced cucumber

French Fries

INSTRUCTIONS

  1. For the Littleburg Almond Tzatziki: In small bowl, combine 1 tablespoon lemon juice and garlic, and let stand 10 minutes. While lemon-garlic mixture sits, grate cucumber on large holes of box grater. Add grated cucumber to small bowl and stir in 1½ teaspoons salt. Let sit.

  2. Add almonds, oil, 1 cup water, remaining 1 teaspoon salt, and lemon-garlic mixture to carafe of blender and blend on high until smooth, about 1 minute. (Mixture may start to steam, this is ok.)

  3. With blender running, add remaining 3 tablespoons lemon juice. Continue to blend until vortex closes inside blender, about 30 seconds (Mixture will curdle and thicken).  Add remaining ¼ cup water and continue to blend until smooth, stopping blender occasionally to stir. Transfer to container and refrigerate.

  4. Working with one handful grated cucumber at a time, place in clean dry dishtowel, squeeze water from grated cucumber over sink, then transfer cucumber to second bowl. Repeat with remaining grated cucumber. Stir refrigerated almond mixture and dill into squeezed cucumber, and season to taste. Refrigerate tzatziki until ready to use.

  5. For the Pork Seasoning: Combine pork gyro seasoning on rimmed baking sheet. Sprinkle pork over sheet and toss to evenly coat.

  6. For the Gyros: Heat oil in non-stick skillet over medium-high heat until shimmering. Add seasoned pork to skillet; cook without stirring, until browned on underside, 3-5 mins.

  7. Flip pork in sections with spatula; continue to cook without stirring, until browned on second side, 3-5 mins. more.

  8. Meanwhile, lightly toast pita until warmed through and pliable; divide tzatziki, seasoned and seared pork, tomatoes, red onions, cucumbers and French fries evenly among pita. Serve.
